I'm looking for a point & shoot that's fairly simple to use, and has the following features:

Large LCD screen
Minimal shutter lag / recycling time
Image Stabilization
4X or greater optical zoom
At least 6 megapixels

Any recommendations would be greatly appreciated! Thanks.

the canon SD series have a big LCD screen.
I'm not sure about the rest of your criteria though.

4X or greater optical zoom 10X optical zoom
At least 6 megapixels 7 megapixels

Besides above emboldened comments, check Jeff Keller's review (http://www.dcresource.com/reviews/panasonic/dmc_tz3-review/index.shtml) of the TZ3. Also, you can look at my TZ3 gallery (http://john-reed.smugmug.com/gallery/2762845) for examples of things I've done with mine. It's a great little camera.

I agree totally with John Reed-

Not only is the Panasonic TZ-3 a very able camera that meets all of your requirements, but it is a lot of fun to use as well.

Canon A570 and A710 are cheaper than the TZ3. What is your price range?

I recommend Canon S5 IS ultra-zoom compact camera, which features a 12x optical zoom lens equivalent to 36-432mm, optical image stabilizer and 8 megapixel sensor. http://www.onlydigitalcamera.blogspot.com/
