Thank you for viewing and commenting. I think you are correct. Before the US became interested in other nations pronunciations, Koy was an acceptable spelling for a Japanese word. Now Koi is more prevalent. Goggle reports 1,330,000 matches on Koi fish and 257,000 matches on Koy Fish.

... then it's unimportant how it's spelled, all that matters is if it sounds like the original Japanese word, and "Koi" and "Koy" sound identical. Therefore, either way must be "right."
