You got that right Bass. The conditions werent really very good at all. While the trees looked great all covered in thick white the sky was also blank and there was no color anywhere. I may as well have shot in black and white. I just had to remember to underexpose a bit to compensate for the snow.
?? I assume you meant OVERexpose a bit to compensate for the snow???
In manual mode (always) what the camera says is right would create an overexposed pic. So I stopped it down a bit to compensate so there would be some texture to the snow. I wasnt worried so much about the trees. I hope Im saying this right.

My D80 is like that in Matrix metering mode.
Always tends to over expose - so
I now use it in centre weighted and it's far
more predictable.

Well, the shots are great but your explanation is backward, unless you have a lefthand camera.
The meter will try to make your subject a middle gray. You must overexpose to make the white lighter...and underexpose dark objects to keep them dark.
Geoff, my camera is a Fuji S700/5700. Shooting in manual when the meter is centered I find pics overexposed slightly so I close down my fstop so the meter is a notch or two underexposed. By the way I like your exposure of London. Is that St Pauls Cathedral on the left? Nicely done.
