    photo properties

    can the digital properties on photos truly reflect when the photo was last edited

    Yes, but specialized software may be necessary. In the case of Nikon for example:

    Though it seems that this software is not being updated as there are a few new Nikon pro cameras out there that do not seem to be supported

    Yes. The software truly reflected the 'real' properties providing you keep the dates accurate on both the camera and the computer.
