Hey 'Gazer ...
- With the Mode Selector Knob (right), set it to "M" Mode.
- Turn the left knob to "DEC" and press the center button
- In the "Color / DEC" menu of the LCD ... use the rear multi-selector to choose "B&W" selection* and press the center button of the selector.
It should now be able to generate B&W shots.
* Remember: "AUTO" and the other "creative" modes will override this B&W setting and only allows color exposures to be available.
P, S, A & M Modes allow for B&W exposures.

Look, I did not create the optical laws of the Universe ... I simply learned to deal with them.
Remember: It is usually the GLASS, not the camera (except for moving to Full Frame), that gives you the most improvement in your photography.

It's not immediately obvious, that's for sure. I actually came across it when I switched my images from the sRGB colorspace to AdobeRGB.
You will notice they are right there, along with the B&W option.
