Welcome Taters! I did not read up on the theory at Wikipedia, but you can take photos with any camera and merge them into panoramic images with the free software mentioned several places in this thread. You don't need Adobe Photoshop.
Kushnirenko: Well, I played with your photos using both Photoshop CS5 and also the stitch software which came with my camera and they both failed miserably to do anything at all with those 3 shots. So, I'm going to have to download the Hugin and PTGui for future attempts with difficult stitches! By the way, was my ACDSee correct with the EXIF info - did you truly shoot with a 10 mm lens?

Yes, your ACDSee is correct. Lens Sigma 10mm F2.8 EX DC HSM Fisheye
Small tips: when you will play with Hugin select for shoots on a tab "Camera and Lens" Lens Type "Circular fisheye"
Up in London, armed only with my Panny P&S - 7 shots in the evening
Would have been about 3 or 4 shots on wide angle - but distortions would be harder to join and
there would have been too much foreground or sky
Done is ICE and then trimmed after in CS3

Yes - it would be a lot more work - but you could transform the pictures to straighten edges
so they could blend better.
I find the best thing with Pano shots (not that I am an expert) is to have in mind how it will
join up. Leave enough overlap - keep camera level (best on a tripod!) better if the exposure
can be locked - although you can get away with it.
They always seem to need a little TLC in photoshop after to sort out any edge problems
sometiems a little straightening too
But TBH for my use ICE does the trick 99/100 times
4 shot handheld panorama looking east across Glacier Bay from Hugh Miller Inlet. I liked the quilted pattern in the clouds that morning. It is a bit challenging shooting handheld on a boat.
