How?

How did you get those shots, and what camera?

The 1) is very classical, throw something in the water and shoot in rafale mode.

for the other ones
1) choose a good place where the water is gushing
2) fix the focus distance on the camera, chose Speed mode (> 1/500s)
3) shoot in rafale mode
4) Make your selection

All has been taken with a sony DSC-V3 camera.

Sorry for the newbie question, but what in the heck is rafale mode? Did you use a tripod?

Excuse me, "rafale" is a french word. Replace it by "Burst".
Tripod could help you but is not mandatory.
