I will be using the Lumix FZ20 for stained glass windows taken from inside the church, daytime. What is the best metering method to choose, multiple (aka matrix), center weighted, or spot????

Assuming that you plan to fill the frame with the stained glass window, I would use matrix metering. I would try to average over as much of the window as possible.

... but if you aren't going to fill the frame with the stained glass, you may want to go center or spot weighted. It is really going to depend on how much of the frame you fill with the stained glass.
I once took a shot of a few stained glass windows such that there was a lot of the picture without stained glass in it. The spot metering became useful. However, I found that by trial and error... The other modes were almost impossible to pick up the window detail as the windows kept overexposing.
