With the panoramic stitching tehat the SD500 offers, does it stich them together on the camera or is it done with the software that canon provides to you to do on your computer?

You have to stitch it with a software, panoramafactory is a great program for that

The software that canon gives you has a panorama stitch program. It is called PhotoStitch. I have used it and it works pretty good.

It does not try to stich in camera becaue auto stiching can screw up if you do not get the photos perfectly aligned. Better to do it in software.

What Canon does in camera is called Stich Assist. Basically it shows you part of the last photo taken to make it easier to align the photos. if you are hand holding your panorama photos this is essential (although you really should be using a tripod for this kind of stuff).
