I am getting ready to purchase my first digital camera (looking at the Canon PowerShot S500). I seen the 640 * 480 video it was a little choppy at 10 fps.
What I would like to know from others with more experience with digital cameras is would it make any difference with the type of compact flash that I would use with this camera.

The type of Compact Flash card makes no difference with a 10fps video. 10fps means you see only 10 frames each second as opposed to the 30fps of a real video. If you want good video then look at the Canon S1 IS at 30fps. That video is pretty good.
