Is it advised to use the D40's in camera processing like sharpening, noise reduction vivid etc or shoot mainly default settings and do the processing on mac/pc

It's entire up to you.
If you like what the in camera processing does or you simply want to take shots and take the card into as store for printing then there is no reason not to use the camera. If you want to shoot RAW and apply lots of adjustments than the in camera settings have no effect on RAW photos anyway (unless you use Capture NX which can read them).

Depends if you want to spend LOTS of time getting the picture just how you want it (you do the PP) or just want the fun of pressing the shutter and getting great shots as the camera interprets it.

There's nothing wrong with letting the camera do all the processing, you just have less control.
