Why do Videos I take with my Canon Digital camera not have a DATE TAKEN section like a photo?
How are you supposed to organize and know the date it was taken then?

You can rename the file to whatever you want.
I put the date first in the file name.

Do you want to see the date/time stamped as the clips were played? That was old tape system. For digital, I'm afraid there will be no such display. However, many video editing programs can detect the time/date data from digital footage and I use this date/time info to add a text line on the video. I haven't used a video editing program that can use the data to automatically display the date/time where I want them to appear though; but I'm not up to date with those programs.
One thing is you must have the date/time on the camera to be correct.

Video camcorder have metadata but only editing program can decipher it; and thinking back my previous answer is based on footage from vidcam. I can't recall if PnS video has similar data though.

gotcha, kinda like MP3 then?
so windows only sees the meta data on Jpegs

That's correct.
Im not familiar with MP3 format video but native formats like AVI, MPEG have meta data that can be read by many video editing programs and is accurate to the date and time the clip was taken.
