When I copy images from my camera's memory card to the hard drive of my computer, data about the camera used, the date the picture it was taken etc. is preserved and will appear whenever the cursor is put over the file name. When I try to archive the photos to a CD however, the extra data is stripped.
Is there any way to copy my photo's to a CD, and still keep the extra information.

If you're copying files from NTFS (eg. Windows XP) to a CD, you might be presented with a warning that you're going to lose some metadata.
You will want to ensure that you store all of your fields in the EXIF data within the image, and not use Window's NTFS file streams.
The camera usually stores these details within the EXIF data (into the JPEG files on your memory card), in which case the files on your hard drive will also show this information (if you right-click and show properties).
If you're simply copying to the CD-ROM, then the EXIF information will be preserved (still accessible by right-click and show properties), but you may no longer get the additional NTFS properties.
Unless you're processing these images with another program that discards EXIF data (eg. Photoshop with Save for Web), the data should be preserved throughout the entire transfer.
