Is there a way I can keep my exposure open for 1 min, 5 min, an hour or longer. I can't figure how to do it or is it even possible?

Use B and a remote release.

Yeah, you should have a bulb mode that lets you press a button and the shutter will stay open until you let go of the button. Like Rhys said, you'll probably need a remote release to activate it (even if it's available without the release, even on a tripod, the camera shake from pressing the button to take the picture, holding it down, and releasing it will still give you a blurry picture). So just time yourself.

Ideally bulb mode with a release cable.
Less ideally copy this suggestion I read here recently.
Someone else had the bright idea of a rubber band holding an eraser onto the button. With a very long exposure the brief jostle of on and off shouldn't be visible.
