....But I am wondering if the issue is the SD card I am using. This is the card:

I don't know the read/write specs. What spec card should I be using to get the best pictures/videos possible? Is it true that anything over 60x is a waste? Will an SDHC give better performance over an SD card or is it true that the older SD cards are faster?

Your pictures or video won't look any different from one card to the next..its just recording a image the the camera sends to it.The speed of a card is about the only thing that differs from card to card. For a P/S camera, 60x speed is plenty as this speed usually exceeds the speed that the camera can write to the card. Taking video is more demanding and a faster card may be desirable for that. SDHC cards will not preform any better, it just a bigger capacity card and their speed is rated by class..to confuse us even more. Like Griptape said..what was wrong with your video??

There is a lot of pixilation and nothing is really sharp. I tried both 640 x 480 and 320 x 240. Are there any other setting that effect the movie quality?

I think your expectations might just be too high. It's not a camcorder, and won't give you even half the quality a dedicated camcorder can. If your issue is frame rate, and the video being very choppy, and not playing smoothly, then the card could play a factor. But picture quality itself won't be any different.

I was hoping for the same quality as this video that was linked to the camera review on this forum....

I will borrow a better card and try some more videos outside in better light.

that movie came from the S3 IS i do believe. and i think it was on a tripod. to get some thing like that video you will have to have it on the highest settings and good light i just took a video with my a570 in 640 and 320 in my bedroom and it came out good. not perfect like that one was. but good.
