I'm looking to buy a new digital camera and would like to keep the cost of the camera itslef under 350. I am a recreational photographer who will likely only use the camera on vacation and taking pics of my nephhews. Most of the pics will be done in 4X6 or 5X7 print but would like to have the option of making prints at 8X10 on occasion. In all liklihood i will just be pointing and shooting in the auto mode since i dont know anything about actual photography. I've been looking at the Canon a85 & a95 as well as some fuji's. Size of the camera doesnt make much of a difference to me, but I would like to put the greatext criteria at quality of the prints. Any advice on which cameras i should take a look at would be apprecaited.

Stay with the A75/85/95 idea. I spent some quality time with the A75 that I bought for my mother in law for Christmas, and I'm now thinking seriously about buying one as a knock around spare for visitors.
The A75 would easily meet your needs and allow you to experiment with manual controls when you feel like it. Almost no red-eye, and good low-light focus. For $170-$200 it's a great choice.
