Ok, the intervelometer can be set to 1 minute but would really like to be able to get a shot every 10 seconds instead. Anyone have any suggestions on how to do this on the S3?

This site has some great software for it. IIRC you can set it for 1 second, maybe less. You need a video program that allows 30fps to make it smooth like butter.

If you go to the Tips>Workflow tabs they will give you a good direction for making HD video out of it. The software costs $50 and has a two week trial. I don't have anything handy right now, but check out this link (http://s84.photobucket.com/albums/k16/hokeyguy/?action=view¤t=CloudsBuilding.flv) to see a rudimentary experiment in low res. The original looks much better in HD res.

If you have a PC you can use the zoombrowser software that came with your camera. It allows for 1 second and higher. Your camera will need to be attached with a USB cord to your pc.
I'll pack the laptop for next week then and give the software bundle a try.
I just picked up a pro lic for Quick Time off Ebay. How is Quick Time pro with making the movie? I would like to get decent quality as this is for a project I willingly volunteered doing. I figured it would force me to get results.

QuickTime Pro is pretty good. Use the tutorial on the link I provided above. They have a mask for making it the proper ratio for HD widescreen format, if that's the direction you are going. I haven't tried the Canon software for doing the shots, I thought it was limited to once every minute, hmmm.

The one minute limit is the camera's intervelometer limit. If you use the zoombrowser PC camera control, it is 1 second maybe even quicker. Just must be attached to the PC.

Cool! I just checked it out. I didn't realize it did this. The GBtimelapse is a bit more robust, but this certainly gets the job done, and the price is certainly right.

Your are correct. It is very basic, but free. The GBtimelapse has more features and is a nice piece of software.
