It seems to be whenever I take photos the person's face is pretty red, looking almost sunburnt.

What would be the correct modes etc. to make this happen less often?

Looks like there aren't too many knobs you can tweak, but one that should help would be "Saturation" available on one of the setup menus. Try setting that at "Low," and see if your luck improves. Are you seeing this issue with and without flash? Another variable you might play with are all the White Balance choices. Try selecting different ones if cutting the "Saturation" doesn't help.
