Both 8gb and 16gb are available, but expensive! IMO right now you would be better off buying several smaller cards. 1gb cards are cheap right now and 2gb seem to be the sweetspot.

I really can't figure out why you would want one. You are limited to 1gig on videos, and although I have never exceeded this, I think you have to re-start the video mode again once the limit is reached. Anyhow, you are better off with several smaller cards rather than one large one. If a card gets corrupted you can grab another and keep shooting, if your 8gig gets corrupted, you could possibly lose all 8gigs of data if something happens.

I use a 4Gb card in my S3. What happens when you hit 1Gb [about 9 minutes in top quality] is that it stops recording. I just hit the record button again and miss a few seconds. Easy.

Newer Canons allow you to record up to 4G videos. I suspect the next version of the S3 will have the same feature.
