Looking for a way to eliminate/minimize in-camera processing to maintain as close to RAW data as I can.

I am comfortable with PP in CS2. Lots to learn, but willing and able.

Not sure yet what image settings are possible.
If I am able to set contrast, sharpening and saturation (or whatever setting relates to color) to 0, will that be closer to the original data?

Got myself a Canon A640 to replace my Canon S50. The A640 is almost
identical to your A630. To set contrast, sharpening and saturation hit the
func set button go to My Colors choose Custom Color and hit the Menu
button.

I think ide rather do those tweaks with photoshop. You can see the before and after before you save the image.
