I just got my first camera (Canon A620) and I was wondering if anyone could point me in the right direction on how to use it well. I read the manual and know how to set aperture, exposure, etc. but I don't know when I should mess with those.

Also could someone recommend a good post processing app? I have iPhoto but I'm also not ready for Photoshop just quite yet. Any suggestions? I have a Mac if that matters. (OS X 10.4.7)

It doesn't hurt to start off in Auto. I personally like using P mode.
Photoshop Elements is a good starter software.

Just enjoy yourself in Auto modes and meanwhile get a copy of basic photography book.

Here's the best source of information I've found. I've read 4 of Bryan's books so far. His explanations are great, the photography in the books are terrific, and his writing style gets you all pumped up to go out there and start shooting with confidence. These books are also available on Amazon, etc.

First Book to read: Understanding Digital Photography

Second Book: Learning to see creatively
(I chose this second because it is a non-technical book. It gets your creative juices flowing and makes you want to learn more. You've covered some of the more 'dry' aspects in the first book so a change of pace is great. I couldn't wait to read his next book after this.

Book Three- Understanding Exposure. After reading this enjoyable book you'll walk away understanding when you want to use different aperatures and speed settings to get your desired results (along with ISO) The sections of the book on various types of light was also excellent.

These books are quick reads. Personally I'd order all three at the same time- you won't regret it.

*I found Amazon's pricing to be even better. My copy of the DVD and Portraiture should be arriving this week- I'll post a review of them after I've gone thru them.

There is a free photo course on the web. If you do not want to enroll, you can just read the lessons. I read a few of the lessons. They are as good or better than some books.
