I read all over the place about setting ev -1/3rd, but how do I do that on my S2?

It is on page 90 of your owners manual. You select exposure compensation from the function menu and use the right and left arrows to set how much.
What's the difference/benifits between using the EV vs the LCD screen?
I would guess the main differences between the 2 are that the EV uses less power and it is easier to see in bright sunlight.

Ahh, thanks. Though, I usually tent to use manual mode exclusively, and it's not avalible there.

There's no reason for it to be there. All exposure compensation does is either lengthen(+) or shorten(-) the amount of time the shutter is open. In manual mode, you are already manually setting the shutter speed for the exposure you want.

Additionally, each change in shutter speed value is ~1/3ev.
For example if you start at 1/60 second, you can change the shutter speed to 1/50(+1/3ev), 1/40(+2/3ev), 1/30(+1ev) or 1/80(-1/3ev), 1/100(-2/3ev), 1/125(~-1ev). Basically for each full change in ev, you are either doubling or halving the amount of time the shutter is open.
