you probably paid the same price for those two 4gb cards as you would for one 8gb card. Plus now all your "eggs" aren't in one "basket". I think you have the right setup...

You're right, although those "eggs" are getting bigger all the time.

It would have been nice to have the 8GB CF that would last me a whole wedding, however part of the risk is of course in loading/unloading CF cards and the ability to just leave one in the camera at all times must surely reduce the possibility of failure (particularly as I spread my risk by writing files simultaneously to CF and SD).

Those SD cards are fiddly and 2GB would mean less swapping.
