I will be using it to take pictures of mountains in Peru when I am cross country skiing.

Do I need to just adjust shutter speed maybe? Is one better for that?
Yes it would help to keep the shutter speed well above 1/200 sec. Pretty much any digital camera with manual controls would work. For a little extra insurance image stabilization might help as well. There are several of these out there from Konika-Minolta, Panasonic, Canon, and Nikon under the heading of AS, IS, and VR.
Konica-Minolta Z3, A1 & A2,
Pansonic DMC-FZ1, FZ3, FZ10, FZ15, FZ20, FX5 & FX7
Canon: S1 IS
Nikon: CoolPix 8800
Again, if you can set the shutter speed pretty high, then you may not need image stabilization, but it couldn't hurt.
