Here's all that matters to me:
1) Image quality
2) Low-light performance
3) Set of manual controls
That's it. What should I get? (and I've done my research, I just want to see what you recommend and any reasons in specific).

Depends on your priorities..
If low light performance and image quality are enough to outweigh lack of manual controls, the Fuji F10 is for you.
If that $300 limit is flexible, you can get the Olympus stylus 800 for about $370 shipped.
